A tart is baked dish consisting of a filling over a pastry base with an open top not covered with pastry. The pastry is usually shortcrust pastry, the filling may be sweet or savoury, through modern tarts are you usually fruit-based, sometimes with.      
 custard. Tartlet refers to a miniature tart, an example would be egg tart. The  categories of "tart ,flan quiche, and pie" overlap with no sharp distinctions.      

  The  French word tarte can be translated to mean either pie or tart, as both are mainly the same with the exception of a pie usually covering the filling in pastry, while flans and tarts leave it open.



 Tarts are through to have either come from a tradition of layering food, or to be a product of Medieval pie making .enriched dough is through to have been first commonly used in 1550, approximately 200 years after pies. In this period, they were viwed as high-cuisine, popular with mobility, in contrast to the view of a commoners pie. While originally savoury with meat filling, culinary tastes led to sweet tarts to prevail, filling tarts instead with fruit and custard. Early Medieval tarts generally had meat filling, but later ones were often based on fruit and custard.

And early tart was the Italian crostata ,dating to at least the mid-15th century. It has been described as a rustic free-form version of an open fruit tart.


 Tarts are typically free-standing with firm pastry base consisting of dough, itself made of flour,thick filling, and perpendicular sides while pies may have softer pastry, looser filling, and sloped sides, necessitating service from the pie plate.


Our recipe for today is 

The ingredients: 

Crust :                                                                           

1 cup unbleached all purpose flour
  1/4 cup of sugar.                                      
            3 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into Pieces
1 1/2 tablespoons cold water
1 large egg yolk
6 tablespoons raspberry jam

Filling:                                                                     

1 cup whipping cream
4 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
2 1/2 pint baskets fresh raspberries 
1 teaspoon powdered sugar
1 teaspoon unsweetened cocoa powder.


 Preparation :  

For crust :

Combine flour ,sugar, cocoa powder and salt in medium bowl. Add butter and rub in using fingertips, until mixture resembles coarse meal, add water and egg yolk and mix in with fork until well Incorporated. Gather dough into rectangle chill 20 slightly at room temperature before rolling out.

Prehat oven to 375°f .butter and flour 13 3 /4×4 inch rectangular pan with 1 inch-high sides and removable bottom. Roll out dough between 2 sheets of waxed paper to 15×6 inch rectangle. Peel off 1 waxed paper sheet. Invert dough into prepared pan,press evenly to fit .freeze until firm,about 10 minutes. Peel off second waxed paper sheet. Trim edges

Line crust with foil,fill with dried beans or pie weights. Bake until crust is set, about 12 minutes. Remove foil and beans. Bake until crust just begins to darken around edges, piercing with toothpick if crust bubbles, about 12 minutes longer
Remove from oven, maintain oven temperature. Spread jam over bottom of crust. Bake until jam is set ,about 3 minutes .transfer pan to rack, cool completely



For filling:                                           

Bring cream to boil in heavy small saucepan. Remove from heat. Add chocolate and whisk until melted and smooth.
Transfer chocolate ganache to bowl and refrigerate until chilled but not firm ,about 45 minutes or less

Using electric mixer, beat ganache until very thick and semifirm. Spread ganache over jam in crust. ( Can be prepared 8 hours ahead . refrigerate) Arrange raspberries atop ganache. Stir powdered sugar and cocoa in bowl . Sift over tart .

The ingredients:

1tbsp olive oil
2 medium onions, finely chopped
3 carrots, trimmed and finely chopped
2 celery sticks finely chopped
4 garlic cloves, finely chopped
2-3 sprigs fresh rosemary leaves picked and finely chopped
1 pound of beef mince
2×400g tins plum tomatoes
Small pack basil ,leaves picked, 3/4 finely chopped and the rest left whole for garnish
1 TSP dried oregano
2 fresh bay leaves
2 tbsp tomato paste
1 beef stock cube
1 red chilli, seeded and finely chopped (optional)
6 cherry tomatoes, sliced in half
75 g Parmesan cheese ,grated, plus extra to serve
400 g spaghetti
Crusty bread to serve ( optional )

 Method:

Put a large heavy-based  saucepan on a medium heat and add olive oil . add the onion,carrots, celery, garlic and rosemary then try for 10 minutes , stirring often, until the veg has softened.
Increase the heat to medium-high, add the mince and cook stirring for 3-4  minutes until the meat is browned all over.

Add the tinned tomatoes, chopped basil, oregano , bay leaves, tomato paste, stock cube chilli, cherry tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes. Bring to the boil , reduce to a gentle simmer and cover with a lid .cook for 1h15 mins stirring occasionally, until you have a rich, thick sauce. Add the Parmesan check the seasoning and stir.

14 tbsp cold butter diced

1 1/2 cups buttermilk.
1 TSP molasses .

Directions :

Prehat the oven to 425F .lightly grease an 8 inch baking dish
In a large bowl,mix together the eggs, buttermilk, and butter. Pour the buttermilk mixture into the cornmeal mixture and fold together until there are no dry spot. Pour the batter into the prepared baking dish.

Bake until the top is golden brown and tester inserted into the Middle of the corn bread comes out clean, about 20 to 25 minutes. Remove the corn bread from the oven and let it cool for 10 minutes before serving.

225 g caster sugar
4 eggs
225 g self raising flour
3 tbsp milk
1 TSP vanilla extract
2 tbsp cocoa powder.

The method:

 First heat oven to 180C/ gas 160C/gas 4 Grease a 20cm cake tin and line the bottom with a circle of grease-proof paper. If you want to make life easy ,simply put all the ingredients except the cocoa powder into a food processor and whizz for 1-2 minutes until smooth. If you prefer to mix by hand, beat the butter and sugar together, then add the eggs, one at a time, mixing well after each addition. Fold through the flour, milk and vanilla extract until the mixture is smooth.
Then.. Divide the mixture between 2 bowls. Stir the Cocoa powder into the mixture in one of the bowls.

Gratin originated in frensh cuisine and is usually prepared in a shallow dish of some kind .A gratin is baked or cooked under an everhead grill or broiler to form a golden crust on top and is traditionally served in its baking dish .

A gratin dish refers to the shallow oven-proof container traditionally used to prepare gratins and similar dishes.

 Potatoes gratine is one of the most common of gratins and is know by various names including " gratin potatoes" and "gratin pomme de terre" . Slices of boiled potato are put in a buttered fireproof dish ,sprinkled with cheese and browned in the oven or under the grill .In North America , the dish is referred to variously as scalloped potatoes, potatoes au gratin , or au gratin potatoes.

the gratin was officially mentioned for the first time july 12, 1788 , during for municipal officers from town of Gap by Charles-Henri ,Duc de Clermont-tonnerre, then lieutenant General od Dauphine the dish was cooked with ortolans (little birds)

Our recipe for today is: Creamy mushroom potato gratin  

the ingreadients:

1 ounce butter
1 tablespoon olive oil
12 ounces mushrooms, sliced ( Mixture of open and closed cup)
1 garlic clove , crushed
1/2 teaspoon nutmeg, freshly grated
1 1/2 lbs potatoes , peeled
1 lb sweet potatoes peeled
1 1/4 cups milk
2 ounces cheddar cheese , grated



 the directions:

preheat the oven to 375 F
heat the butter and oil together in a frying pan, add the mushrooms and cook over a high heat until the mushrooms are soft and the juices have evaporated

stir in the garlic and nutmeg and remove from the heat
slice both kinds of potatoes to about the thickness of a pound coin
Arrange half over the base of an ovenproof dish and season.

Scatter over half of the mushrooms .Repeat the layers

Pour the milk over the potatoes and mushrooms . Cover the dish with foil and bake for 1 hour

Remove from the oven , scatter over the cheese and bake for a further 25 mins or until the top is golden and the potatoes are golden brown.

the ingredients:

for the sauce:

1 cup extra virgin olive oil
2 medium red onion , finely diced
2 large cloves minced garlic
8 ounces pancetta ,diced
    salt and freshly ground pepper
2  28-ounce cans italian plum tomatoes
3 tablespoons tomato paste
3/4 pound sirloin
1/4 cup freshly grated pecorino Romano
2 eggs
10 sprigs fresh parsely,leaves only ,washed and dried
2 large whole cloves garlic
1/2 cup flour
1 pound italian sausage , a mix of hot and sweet

 for the lasagna:

1 15-ounce container ricotta cheese
2 extra-large eggs
2 cups freshly grated pecorino Romano
1/2 cup chopped parsely
1 pound mozzarella ,grated
16 sheets fresh lasagna noodles,perferably Antica Pasteria

directions:

Step 1:
for the sauce , heat 1/2 cup oil in a large heavy Dutch oven or kettle over low heat Add the onions , minced garlic and pancetta, and cook , stirring for 10 minutes , until the onions are wilted . Season liberally with salt and pepper .Raise heat slightly, Crush the tomatoes into the pan , and add their juice .Add the tomato paste and 2 cups lukewarm water .Simmer for 1 hour.

 Step 2:
 combine the sirloin, cheese and eggs in a large bowl. Chop the parsely with the whole garlic until fine, then stir into the beef mixture. Season lavishly with salt and pepper . Using your hands, mix until all ingredients are well blended .Shape into meatballs and set aside .

Heat the remaining oil in a large skillet over medium-high heat.
Dust the meatballs lightly with flour, shaking off excess, and lay into the hot oil. Brown he meatballs on all sides ( do not cook through) and transfer to the sauce.

 in a clean skillet , brown the sausages over medium-high heat .Transfer to the sauce. Simmer 1 1/2 hours.

Step 5:
Heat the oven to 350 F . in a large bowl , combine the ricotta, eggs , pecorino Romano, parsely and all but 1 cup of mozzarella. season well with salt and pepper .Mix throughly

Step 6:
Remove the meatballs and sausage from the sauce , and set aside to cool slightly , then coarsely . Spoon a thick layer of sauce into the bottom of a 9-by12 inch lasagna pan . Cover with a layer of noodles. Spoon more sauce on the top, then add a third of the meat and a third of cheese mixture.Repeat for 2 more layers , using all the meat and cheese. Top with a layer of noodles, and cover with the remaining sauce. Sprinkle reserved mozzarella evenly over the top. Bake 30 minutes. Let stand 10 minutes before serving.

preheat oven to 350 F with rack in middle

2 tbsp butter
2 tbsp olive oil
1 large onion sliced

cook over medium heat until things start to sizzle, and then cover and reduce to low until your onion are soft , stir them around now and then .you dont want to brown them .if that starts to happen .add a little water to the pot .but chances are the steam and condensation will generate enough moisture to prevent them from browning.

While your onions are steaming .gather up:

2 lbs tomatoes
2-3 Cloved garlic sliced
1 tbsp uncooked white rice ( to thick the soup)
Big pinch of salt
A sprig of fresh thyme or basil
1/2 Bay leaf .

1 tsp gram masala ( masala would add a rich nice flavour to the soup.)

while your onions continue to simmmer:

wash and core your tomatoes .four clean slices through the tomato

When all the cores have been removed .you will have a heap of tomatoes .

If your onions are nice and soft .slice your garlic and toss it into the pot and cook for a two minutes

Now add tomatoes, salt, bay leaf and your fresh herbs to the pot of onions.

As i mentioned before, the rice does a good job and it keeps the fat and calorie count down a little

cook all of this over medium heat .stirring once in a while until your tomatoes are well cooked and break apart easily

1cup water
1 more tbsp butter
Another pinch of salt

Cook for a few more minutes to melt the butter and to ensure that your rice is tender.

for the vinaigrette:

2 garlic cloves , minced
2 teaspoon dijon mustard
3 tablespoons balsamic vinegar
1 lenon , juiced
2 tablespoons chopped fresh parsely

table salt and black pepper

for the salad:

1 pound small red new potatoes ,scrubbed and halved
8 large eggs
1/2 pound haricots verts or frensh green beans ,stems trimmed
2 pounds fresh sushi quality tuna
2 -3 tablespoons extra virgin olive oil
salt and pepper
1 pint teardrop or cherry tomatoes ,halved
1 cup olive
18-20 anchovy fillet
10 caper berries with stems
1/2 bunch fresh chives ,snipped in 1/2 .

direction:

to make vinegrette : combine all ingredients in a mason jar .screw the cap on the jar and shake the vinegrette vigorously to emulsify .set the dressing aside while prepering the salad so the flavors can marry .

  • 1 cup freshly grated Parmigiano cheese (parmesan)
  • 1/4 pound (1 stick) butter 
  • 1/2 cup mascapone cheese

instructions :

  • Put 10 cups cold water in a heavy_bottom pot with olive oil and salt .bring to a boil
  • Add the polenta to the water in a gentle stream, whisking or stirring vigorously in the same direction ,as you  pour it in
  •  Reduce the heat to medium-low so that the water is simmering.
  • Stir continuously for the first 2-3 minutes to avoid any lumps
  • When the polenta stars to mildly bubble away , stir it every few minutes to prevent it from sticking.Using a wooden spoon, scrape the bottom and sides.Adjust the heat as necessary.
  • Cook for 35-40 minutes .the polenta mixture will be thick and glossy and just pulling away from the sides.

2 pounds stew beef
2 tablespoons vegetable oil
2 cups water
1 tablespoons worcestershire sauce
1 clove garlic ,peeled
1 or 2 bay leaves
1 medium onion , sliced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon paprika
dash ground allspices or ground cloves
3 large carrots, sliced
3 ribs celery ,chopped
2 tablespoons cornstarch

DIRECTIONS:

Brown meat in hot oil . Add water, worcestershire sauce, garlic, bay leaves, onion, salt , pepper, sugar, paprika , and all spices. Cover and simmer for 1 and 1/2 hours.
Remove bay leaves and garlic glove.Add carrots and celery.cover and cook 30 to 40
minutes longer.
To thicken gravy , remove 2 cups hot liquid . Using a separete bowl, conbine 1/4 cup
of water and cornstarch until smooth .mix with a little hot liquid and return mixture to pot . stir and cook until bubbly ..

The history of Coffee goes at least as far back as the 10th century, with a number of reports and legends surrounding its first use .the native origin of Coffee is through to have been Ethiopia .the earliest substantiated evidence of either coffee drinking or knowledge of the coffee tree is from the 15th century, in the Sufi monasteries of Yemen. By the 16th century, it had reached the rest of the Middle East ,south India, Persia, turkey, horn of Africa, and northern Africa. Coffee then spread to the Balkans, Italy and to the rest of Europe, to Indonesia and then to America.



The earliest credible evidence of either coffee drinking or knowledge of the coffee tree appears in the middle of the 15th century, in Yemen's Sufi monasteries.
Coffee beans were first exported from Ethiopia to Yemen. Yemeni traders brought coffee back to their homeland and began to cultivate the bean.the word qahwa originally meant wine, and Sufis in Yemen used the beverage as an aid to concentration and as a kind of spiritual intoxication when they chanted the name of God.

 Sufis used it to keep themselves alert during nighttime devotion .A translation of aljaziri's manuscript traces the spread of coffee from Arabia Felix northward to mecca and medina ,and then to the larger cities of Cairo, Damascus, Baghdad and Constantinople. During the 16th century, it had already reached the rest of the Middle East, the safavid empire .from the Middle East, coffee drinking spread to italy ,then to the rest of Europe, and coffee plants were transported by Dutch to the East Indies and to the America.
