Moroccan couscous recipe

COUSCOUS 💜

The origin of couscous is uncertain. Lucie Bolens affirms that Berbers were preparing couscous as early as 238 to 149 BC, describing primitive couscous pots found in tombs dating back to the reign of the Berber King Massinissa.Nevertheless, Charles Perry states that couscous originated between the end of the Zirid dynasty and the rise of the Almohadian dynasty between the eleventh and the thirteenth centuries. The remains of the first vessels ( known ) in the Tiaret region ( Algeria ) where cooking tools dating from the ninth century have been discovered, very strongly resemble the primary tool for cooking couscous

One of the first written references is from an anonymous 13th-century North Africancookbook, Kitāb al-tabǐkh fǐ al-Maghrib wa'l-Andalus "The cookbook of the Maghreb and Andalusia", with a recipe for couscous that was 'known all over the world'. To this day, couscous is known as 'the North Africa national dish Couscous was known to theNasrid royalty in Granada as well. And in the 13th century a Syrian historian from Aleppoincludes four references for couscous.

These early mentions show that couscous spread rapidly, but generally that couscous was common from Tripolitania to the west, while from Cyrenaica to the east the main cuisine was Egyptian, with couscous as an occasional dish. Today, in Egypt and the Middle East, couscous is known, but in Tunisia, Algeria, Morocco and Libya couscous is a staple. It is also common in Western Africa whence it has spread into Central Africa. It is the national dish of theMaghreb countries. Couscous reachedTurkey from Syria to in the 16th century and is eaten in most of the Turkish southernprovinces.
Couscous is a traditional dish in Trapani, Sicily. In Rome Bartolomeo Scappi's culinary guide of 1570 describes a Moorish dish, succussu.

One of the earliest references to couscous in France is in Brittany, in a letter dated January 12, 1699. But it made an earlier appearance inProvence, where the traveler Jean-Jacques Bouchard wrote of eating it in Toulon in 1630. Couscous was originally made from millet.Historians have different opinions as to whenwheat began to replace the use of millet. The conversion seems to have occurred sometime in the 20th century, although many regions continue to use the traditional millet. Couscous seems to have a North African origin. Archaeological evidence dating back to the 10th century, consisting of kitchen utensils needed to prepare this dish, has been found in this part of the world.

GRILLED CHICKEN kebabs

kebabs 🍡🍷

Kebab (also American kabob) are variousMiddle Eastern dishes originally based on grilled meat, and now with many variants. Two of the best-known kebab dishes areshish kebab and doner kebab.

In contemporary American and British English, a kebab is a common dish, consisting of a skewer with small pieces of meat or seafood, together with vegetables such as onions, tomatoes, and bell peppers. Also known as shish kebab or sometimesshashlik, kebabs are customarily prepared in homes and restaurants, and are usually cooked on a grill or barbeque. The word kebab may also be used as a general term in English to describe any similar-looking skewered food, such as brochette, souvlaki, yakitori, or numerous small chunks of any type of food served on a stick. This is different from its use in the Levant, where shish (Persian/Mazandarani -Turkish) is the word for skewer, whilekebab comes from the Persian word forgrilling.

Our recipe for today is : grilled chicken kebabs

 INGREDIENTS:

1 black cardamom pod (may substitute green cardamom pod)

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground cloves

1 teaspoon cumin seed

1 small red or yellow onion (2 or 3 ounces)
Leaves from 6 to 8 stems cilantro

1-inch piece fresh ginger root

1 medium clove garlic

1 small green chili pepper

1 3/4 to 2 pounds boneless, skinless chicken (preferably a mixture of light and dark meat)

Generous pinch kosher salt

1/4 teaspoon freshly ground black pepper

1 large egg

1/4 cup plain dried bread crumbs (may substitute 1/3 cup packed fresh bread crumbs)

The directions:

Preheat the oven to 375 degrees. Use nonstick cooking olive oil spray to grease a rimmed baking sheet.

Crush the cardamom pod to release its seeds; transfer them to the baking sheet, along with the cinnamon, cloves and cumin seed. Toast in the oven for 2 minutes, until fragrant. Let cool. Increase the oven temperature to 400 degrees.

As you prep the following ingredients, transfer them to the bowl of a food processor: Coarsely chop the onion (to yield 3/4 cup), the cilantro leaves and some tender stems (to yield 1/4 cup). Peel the ginger, then coarsely chop it along with the garlic. Stem and seed the green chili pepper, then cut it into small chunks. Pulse until evenly chopped, stopping short of a paste consistency. Transfer to a large mixing bowl.

Remove and discard all visible fat from the chicken. Cut the meat into small, equal-size chunks, then transfer to the food processor. Pulse until evenly chopped, stopping short of a mushy consistency. Transfer to the mixing bowl, along with the salt, black pepper, egg, bread crumbs and toasted spices. Use your clean hands to combine and incorporate the ingredients.

Scoop a small handful into your palm, shaping the mixture to a log that's 3 inches long and 1 inch wide. Place on the baking sheet. Repeat to form 11 more logs, using all the mixture and spacing the logs at least 1 inch apart. Roll and spray them lightly with the nonstick cooking olive oil spray. Bake for 8 to 10 minutes, then turn them over and bake for 6 to 8 minutes or until evenly browned.

Divide among individual plates, skewering them if desired for easy handling.

ITALIAN ZAPPOLE recipe

         ITALIAN ZAPPOLE 😄💝

A Zeppola (plural: zeppole; in southern Italian dialects: zeppole, in north eastern dialects:frittelle) is an Italian pastry consisting of adeep-fried dough ball of varying size but typically about 4 inches (10 cm) in diameter. This doughnut or fritter is usually topped withpowdered sugar, and may be filled withcustard, jelly, cannoli-style pastry cream, or abutter-and-honey mixture. The consistency ranges from light and puffy, to bread- orpasta-like. It is also eaten to celebrate St. Joseph, which is an Italian holiday.

Zeppole are typical of Italian cuisine, especially that of Rome and Naples. They are also served in Sicily, Sardinia, on the island ofMalta, and in Italian-Canadian and Italian-American communities in Canada and theUnited States. Zeppole are known by other names, including Bignè di San Giuseppe (in Rome), St. Joseph's Day cake, and sfinge. Zeppole are traditionally consumed during the Festa di San Giuseppe (Saint Joseph's Day) celebrated every March 19, when zeppole are sold on many streets and sometimes presented as gifts.

In Istria, Croatia this pastry is called blenzi in the Croatian speaking places and zeppole in the Italian-speaking places. They are always topped with sugar either powdered or coarse.

The custom was popularized in the early 19th century by Neapolitan baker Pasquale Pintauro.

The terms zeppole and sfinge are also used to refer to baked cream puffs made fromchoux pastry.

Some zeppole are filled with ricotta mixed with small pieces of chocolate, candied fruits and honey. In some parts of the U.S., they are called crispellis.

Zeppole can also be savory, and consist of fried bread dough often filled with anchovy. In parts of Calabria, the anchovy or a sultana variety are consumed on New Year's Eve and New Year's Day. In Malta, anchovy zeppoli are traditionally consumed during the Lentfasting period. This version of savoury zeppole are known locally as Sfinge. The sweet version is also available in many confectioneries.

In the region of Frosinone in Southern Lazio the term "Sfinge" refers to a mixture of ricotta, sugar and eggs with the flour, which can then be flavored with vanilla, almond, etc. It is still fried in ball shapes served covered with confectioner's sugar.

ZUCCHINI FRITTATA

    FRITTATA  🍲

The Italian word frittata derives from friggereand roughly means fried. This was originally a general term for cooking eggs in a skillet, anywhere on the spectrum from fried egg, through conventional omelette, to an Italian version of the Spanish tortilla de patatas, made with fried potato. Outside Italy, frittatawas seen as equivalent to "omelette" until at least the mid-1950s.

In the last fifty years, "frittata" has become a term for a distinct variation that Delia Smith describes as "Italy's version of an open-face omelette". SheIn Street Fashion When used in this sense, there are four key differences from a conventional omelette:
There is always at least one optional ingredient in a frittata, and such ingredients are combined with the beaten egg mixture while the eggs are still raw rather than being laid over the mostly cooked egg mixture before it is folded, as in a conventional omelette.

 Shop Fashion Dresses at SheIn.com!

Eggs for frittata may be beaten vigorously, to incorporate more air than traditional savory omelettes, to allow a deeper filling and a fluffier result.

The mixture is cooked over a very low heat, more slowly than an omelette, for at least five minutes, typically 15, until the underside is set but the top is still runny.

The partly cooked frittata is not folded to enclose its contents, like an omelette, but it is instead either turned over in full, or grilled briefly under an intense salamander to set the top layer, or baked for around five minutes.
